Energise your Mornings!

Over 50 sluggish mornings? Energise your day with protein.

Breakfast is my favorite meal. I like to start my morning with protein because I feel more energetic and don’t get hungry for hours. I love carbs; there is nothing like a gorgeous pancake with maple syrup or palm sugar syrup, but those make me sluggish, satisfied… but with less energy.

Last week my friend stopped by my house with a beautiful gift: Eggs—fresh eggs from her very happy chickens from her Quinta here in Portugal. I know the chickens are happy because I have met them. They have their own protected yard, and there are a few airy little houses where they lay their eggs. There is plenty of room for them to roam around. Every once in a while, they get a visit from a lovely peacock. The roosters prance around- some are more active than the others.

The first thing that I had to do was to wash the eggs. They were that fresh!

Morning Number One

2 eggs

cherry tomatoes

4 fresh shiitake mushrooms

2 tablespoons of chopped scallions from my own patio (I’m proud of herbs!)

2 tablespoons of chopped parsley from my patio

freshly ground pepper

I did not add salt because I’m adding less and less to my recipes, but please add that.

Olive oil – I pour olive oil on my pan and then rub off the excess.

How To

Pre-heat the stovetop.

Beat the eggs slightly.

Pour olive oil on the pan and then rub off the excess.

Throw in the shiitake mushrooms and cook them for about 10 minutes, throw in the tomatoes and cook them for a few minutes. Some people like to stir fry the tomatoes until they are brownish and then throw out the excess water from the fruit. I cook my tomatoes for about 5 minutes.

Add the well-beaten eggs and fresh herbs.

Lower the heat and let the eggs cook slowly.

I have never timed my cooking. I get a cup of coffee and keep an eye on the eggs. Lift a part of the egg to see if they are cooked and when they are ready, turn them over carefully. Sometimes my omelet falls apart when I turn them over. I used to get upset, but now I think of them as rustic eggs.

If you don’t want to flip the eggs: cover them for a few minutes- until the top is well cooked.

Morning Number Two

Fried Eggs with Feta Cheese and My Fresh Herbs

2 eggs

2 tablespoons of chopped scallions from my own patio (I’m proud of herbs!)

2 tablespoons of chopped parsley from my patio

freshly ground pepper

100 grams feta cheese

1 Tablespoon Greek yogurt

1 teaspoon of butter.

Olive oil – I pour olive oil on my pan and then rub off the excess.

How To

Pre-heat the stovetop.

Beat the eggs slightly.

Pour olive oil on the pan and then rub off the excess.

Let the butter brown but don’t burn it- although burn butter is very delicious too!

Place the eggs carefully in the frying pan

Add chopped feta cheese

2 tablespoons of chopped scallions from my own patio (I’m proud of herbs!)

2 tablespoons of chopped parsley from my patio

freshly ground pepper

Lower the heat

*Some people like to have a well cooked yoke and if hat is what you want just cover the pan for a few minutes.

Serve:

Place 1 Tablespoon of yogurt on you plate and spread it thinly, add the fried eggs on top and, get your coffee. Your tasty protein breakfast is ready.
