New Year resolutions don’t interest me
but I have promised myself to try new things as often as possible. I suppose that it could be a resolution, but it’s just a promise to keep my day-to-day interesting.
I wanted to start the new year with a delightful home-cooked meal, so I went to my favorite fishmonger down the street from my home.
When I walked in, I saw a bright orange and bizarre fish, full of texture, lying elegantly on the ice. They told me that the fish is called a scorpionfish, and its meat is similar to the lobster, only more tender. I had to try it!
I asked them to clean the fish to bake it in the oven, and I saved the head to make broth for another day.
Baked Scorpionfish
Cauliflower rice
Small potato
Preheat oven to 250 c
Marinate the scorpionfish for about 15 minutes
3/4 cup water
2 Tablespoons balsamic vinegar
2 Tablespoons soy sauce
1 Freshly squeezed lemon
1 teaspoon honey
Sea Salt and pepper to taste
Boil 1 small potato
1 Cauliflower
Chop cauliflower and place pieces in the blender to chop it finely. Some people prefer to use a food processor, but I don’t have one, so I use a blender.
3 Carrots
1 Onion
Chop the onion, stir fry it for 5 minutes, cover it and let it simmer until the onions are soft and transparent.
Add carrots and cover the pan. Simmer for 10 minutes.
Add cauliflower, salt, fresh herbs, and simmer until cauliflower for 10 minutes.
Place the fish in the oven when you put the cauliflower in the pan so that everything will be ready roughly at the same time.
Bake the fish for about 15 minutes.
